Tortang Talong with Crab Meat

Tortang Talong is a Filipino dish that is made by grilling eggplant and then wrapping it with an egg mixture. This version adds crab meat to the dish for added flavor and protein.

  1. Grill the eggplants until the skin is charred and the flesh is soft. Peel off the skin and mash the flesh with a fork.
  2. Mix in the crab meat with the mashed eggplant.
  3. In a separate bowl, beat the eggs and add in the flour, salt and pepper. Mix well.
  4. Heat oil in a pan over medium heat.
  5. Dip each eggplant and crab meat mixture in the egg mixture and then fry in the pan until golden brown on both sides.
  6. Drain on a paper towel and serve hot.
