Tortang Talong is a Filipino dish that is made by grilling eggplant and then wrapping it with an egg mixture. This version adds crab meat to the dish for added flavor and protein.
Ingredients
- 4 eggplants
- 1 cup JRA Crab Meat (White)
- 4 eggs
- 1/4 cup flour
- salt and pepper, to taste
- oil for frying
Instructions
- Grill the eggplants until the skin is charred and the flesh is soft. Peel off the skin and mash the flesh with a fork.
- Mix in the crab meat with the mashed eggplant.
- In a separate bowl, beat the eggs and add in the flour, salt and pepper. Mix well.
- Heat oil in a pan over medium heat.
- Dip each eggplant and crab meat mixture in the egg mixture and then fry in the pan until golden brown on both sides.
- Drain on a paper towel and serve hot.
